What "Thermal Shock" Actually Does to Your Coffee

"Thermal shock fermentation" is one of those phrases that shows up on a specialty coffee bag, sounds impressive, and then nobody explains it. Most people either nod along or skip straight past it to the tasting notes. Fair enough — but it's worth understanding, because it's not just a cool name. It's a specific, engineered process, and it comes from a farmer who approaches coffee less like agriculture and more like chemistry.

A Chemical Engineer, Back on the Farm

Wilton Benitez runs Granja Paraíso 92 in Cauca, Colombia. Before he became a farmer, he trained as a chemical engineer — and rather than leaving that background behind, he brought it home with him. Wilton built an on-site microbiology lab at the farm, treating fermentation the way you'd treat any other controlled chemical process: measured, tested, repeated, refined.

What "Thermal Shock" Actually Means

The technique itself involves alternating the temperature of fermenting coffee between roughly 40°C and 12°C — a deliberate hot-then-cold cycle designed to change how sugars and aromatic compounds develop before drying begins. It's followed by a precise 36-hour drying window, timed to lock in exactly the profile the fermentation produced.


None of this happens by accident. It's the kind of process you only get from someone treating a coffee farm as a laboratory — because that's exactly what Wilton is doing.

The result is a coffee that doesn't taste like a generic "Colombian" cup. It tastes like a specific, engineered decision — because it is one.
