Our Name Change
Haiku Brew is becoming Color Theory Coffee. Only the name and the look are changing. The same people run the roastery, Justin still roasts every batch, and the coffees, sourcing standards and producer relationships all stay the same. Wholesale accounts and current customers don't need to do anything.
The new name comes from how color shapes the coffee experience. That includes cherries ripening on the tree, the color shift during roasting, and how what you see shapes what you expect to taste. Our bags have always used color as a guide to flavor. Orange and yellow bags signal citrus notes, and pink and purple bags signal berry notes.

About Us
Haiku Brew started as a passion project between two brothers. Before coffee, Justin was a woodworker who built custom live-edge tables, which gave him an eye for sourcing rare, high-quality materials. That same instinct now goes into finding coffee.
The company grew first through wholesale, roasting the drip coffee, espresso and lattes served at partner cafés. Many of those cafés still serve our coffee today. From there, we started doing what we'd wanted to do from the start: finding unusual, genuinely interesting coffees and getting them to people who care about the same things.
We believe the farmers create the flavor. Our job is to find great coffee, build real relationships with the people who grow it, roast it carefully and let their work show up in the cup.
Renowned Producers We Work With
We roast coffees from some of the most respected and innovative producers in specialty coffee, many of them known for pioneering experimental processing. We name the producer on our coffees wherever we can, because their work is what makes each lot special. Our featured producers include:
- Wilton Benitez, Granja Paraíso 92 (Piendamó, Cauca, Colombia): A chemical engineer turned coffee producer and one of the world's best-known coffee innovators. His farm runs an on-site microbiology lab, bioreactors and multi-stage controlled fermentation, and is known for thermal shock processing. We carry his Double Thermal Shock micro-lots.
- Sebastián Ramírez, El Placer (Quindío, Colombia): A processing specialist focused on post-harvest flavor development, working with rare varieties like Gesha and Pink Bourbon and methods such as carbonic maceration.
- Ana María Donneys, Café Primitivo (Quindío, Colombia): A fifth-generation producer known for regenerative farming and experimental fermentation.
- Jairo Arcila, Santa Mónica (Armenia, Quindío, Colombia): Known for fruit co-fermented coffees such as our Strawberry Crunch and Peach & Coconut lots.
- Andrés Martinez, El Sendero (Cauca, Colombia): Grows rare varieties including Geisha, Chiroso, Papayo, Sidra and Bourbon Rosado.
We've also roasted coffees from Yessica and Diego Parra (El Mirador, Huila, Colombia), Huver Castillo (El Paseo, Nariño, Colombia), Brayan Alvear (San Adolfo, Huila, Colombia) and Bagaragaza Deo (Butare Farm, Rwanda, a 2015 Cup of Excellence winner), along with lots sourced through our partner Cofinet.
