Guatemala SHB Lake Atitlan

Finca Santo Tomas Perdido

Single Origin Specialty Coffee by Haiku Brew Coffee

Discover the artistry of three generations in every cup with this exceptional single-origin coffee from Finca Santo Tomas Perdido, sourced exclusively for Haiku Brew Coffee from the pristine volcanic highlands of Lake Atitlan, Guatemala.

The Farm Story

Since 1996, the Torrebiarte family has cultivated excellence at Finca Santo Tomas Perdido in San Lucas Toliman, where the serene waters of Lake Atitlan meet volcanic mountain slopes. Now in its third generation under the stewardship of Javier Torrebiarte, this family farm represents the perfect blend of tradition and innovation.

Javier brings international expertise home to Guatemala, having studied agricultural business and technology in both the US and London. His vision drives daily operations, from field management to the meticulous wet mill processing that defines their quality standards.

Sustainable Excellence

This farm is more than coffee—it's a commitment to community and environment. With 125 full-time employees growing to 500 during harvest season, Finca Santo Tomas Perdido supports the local community while pioneering sustainable practices. Their innovative hydroelectric power system harnesses natural resources to reduce their carbon footprint, embodying responsible coffee production.

Quality Innovation

The Torrebiarte family continuously evolves their craft. Recent investments in advanced wet mill sorting technology, including multi-stage screening processes, ensure only the finest parchment achieves their premium standards. This dedication to improvement means each harvest surpasses the last in quality and consistency.

Cup Profile

SHB (Strictly Hard Bean) grade ensures superior density and flavor development from high-altitude cultivation.

There is an amazing and rich caramel profile with this coffee followed by a bit of brist and crips pear. The coffee is finished off with a caramel and chocolate aftertaste.
