The cherries undergo rigorous quality control, starting with precise brix level analysis to optimize flavor. Handpicked cherries are meticulously sorted at the wet mill, ensuring only the finest make it through. The natural sun-dried process takes 30 to 35 days, with cherries moved frequently to enhance their attributes.

Finca El Platanillo, managed by the Coto family since 1977, is renowned for its commitment to the ecosystem, community, and coffee quality. Certified by Rainforest Alliance since 2005, the farm integrates environmentally friendly practices and innovative educational programs, such as the award-winning "Bachillerato en Ciencias y Letras con Diplomado en Café."
